Which knot do I use?

You should use an Albright knot for attaching wire to monofilament or a clinch knot for rigging.
What's the difference between Titanium Tooth Proof and Titanium Surfstrand?

Tooth Proof is single strand and Surfstrand is a 1x7 multistrand.
Should I use a crimp sleeve?

The proper way to crimp is to pass the wire through the sleeve twice like you would normally do with any wire leader, but you will need to run the tag end back through the sleeve a third time then crimp the full length of the sleeve.
Will this work for wahoo?

Yes it's ideal for all toothy fish like barracuda, king mackerel, wahoo and pike.
